Stewed Cauliflower, Tomatoes, and Onions

This is a delicious and filling side dish that goes well with your favorite sandwich or salad.

Ingredients

  • 1 medium head of cauliflower
  • 1 medium onion
  • 2 large tomatoes
  • 1 tablespoon vegetable oil (or cooking oil of choice)
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon ground black pepper
  • 1 tablespoon dried parsley
  • 1/4 cup Parmesan cheese, grated

Directions

  1. Wash hands with soap and water.
  2. Chop the cauliflower into 2-inch pieces.
  3. Peel the onion and chop it into small pieces.
  4. Chop the tomatoes into small pieces.
  5. Put the cauliflower in a medium saucepan and add 1 inch of water. Cook over medium heat, and let it boil for 3 minutes. Drain cauliflower.
  6. In a large pan, heat the oil, and add the onion. Cook over medium heat for 3 to 5 minutes.
  7. Add the garlic and cauliflower. Cook while stirring for 3 minutes, until lightly browned.
  8. Add the tomatoes and pepper. Cook for 5 more minutes.
  9. Serve with a sprinkle of parsley and cheese.
