Brighten up your snack selection with some fresh, fiesta flavor. Only five ingredients. 

Ingredients

  • 1/3 cup black beans, low sodium
  • 1 tomato sliced and diced (~2 Tbsp tomatoes, diced)
  • 1 tablespoon onion, diced
  • 1 teaspoon lemon juice
  • 1/2 ripe, fresh avocado, halved, pitted and peeled

Directions

  1. Wash hands with soap and water.
  2. In a bowl, combine black beans, tomatoes and onion. Squeeze in fresh lemon juice.
  3. Serve in fresh avocado half.
