Red Chile Stew

Makes: 8 servings

Spicy and savory, this four ingredient stew is simple and delicious.

Ingredients

  • 3 dried red chiles (more or less depending on taste)
  • 1 cup water
  • 2 pounds pork top loin (cut into pieces)
  • 1 teaspoon oregano
  • 1/2 teaspoon garlic powder
  • salt (optional)

Directions

  1. Wash hands with soap and water.
  2. Wash chilies, removing stems and seeds. Place in blender with 1 cup water and blend into paste
  3. Brown pork lightly in non-stick skillet. Add the chili paste and mix well, adding water if mixture is too thick. Add oregano and garlic powder. Cover and simmer slowly for one hour.
