Zucchini Stir Fry

Makes: 4 servings

Enjoy your zucchini bumper crop or farmers market bounty with this quick and easy vegetable side dish.

Ingredients

  • 1 tablespoon vegetable oil (or cooking oil of your choice)
  • 1 medium onion
  • 1 medium yellow squash
  • 1 medium zucchini
  • 1 red pepper
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon basil
  • 1/4 teaspoon oregano

Directions

  1. Wash hands with soap and water.
  2. Peel and chop the onion.
  3. Cut the yellow squash and zucchini into small pieces.
  4. Chop the red pepper into small pieces.
  5. Heat the oil in a frying pan.  Add the onion.
  6. Cook over medium heat, stirring quickly for 1 minute.
  7. Add the spices and stir a few times.
  8. Add remaining vegetables and cook for 3 to 5 minutes until vegetables are just tender.
