Oat Bran Muffins

Oat Bran Muffins fresh out of the oven
Makes: 12 servings

Full of fruit and oat bran, these tasty muffins can be enjoyed as a snack or a dessert. 

Ingredients

  • 2 1/4 cups oat bran
  • 1/4 cup brown sugar, firmly packed
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon baking powder
  • 1 large egg
  • 1/2 cup orange juice
  • 3/4 cup non-fat (skim) milk
  • 2 tablespoons canola oil
  • 3/4 cup unsweetened applesauce
  • 1 medium banana, mashed
  • 2 tablespoons raisins, dates, or other dried fruit

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 425 degrees F.
  3. In a large bowl, mix the first four dry ingredients. Set aside.
  4. In another bowl, mix the egg with orange juice, milk, and oil.
  5. In small bowl, mix fruit and blend with dry ingredients.
  6. Add the liquid ingredients to the dry until it is moist.
  7. Spray muffin tin with a non-stick coating. Pour batter into muffin tins.
  8. Bake for 15 to 17 minutes. Remove muffins from pan after 10 minutes. Cool on a rack. Freeze muffins for later use.

Not very moist or sweet. Participants did not like them. Spent extra money and time to locate "oat bran," not worth it.

Not moist, nor very sweet. The healthy muffin and cookie recipes can be frustrating because they often don't have much flavor, and look uncooked after baking.
