Turkey Meatloaf

Makes: 5 servings

Toss some sweet potatoes in the oven when you're baking this meatloaf, and pair this dinner with a tossed salad for a tasty and delicious meal!

Ingredients

  • 1 pound ground turkey (85% lean)
  • 1/2 cup oats (regular, dry)
  • 1 egg
  • 1 tablespoon onion (dehydrated, or one small onion, minced)
  • 1/4 cup ketchup
  • 2 celery stalks (chopped)
  • 2 garlic cloves (minced)
  • 1/2 green pepper (seeded and diced)

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 °F.
  3. Combine all ingredients and mix well.
  4. Bake in 9x5 loaf pan for 25 minutes or until it reaches an internal temperature of 165 °F. Check the temperature with a meat thermometer.
  5. Cut into five slices and serve.

25 minutes in a moderate oven (350 degrees) is NOT enough to cook this through. I had to almost double the time in order to get it to the right temperature and to get it done on top. Otherwise, this is a good, basic meatloaf recipe...just add more time.
