Light and flaky biscuits make excellent additions to holiday meals and family gatherings.

Ingredients

  • 2 cups flour (all purpose)
  • 2 teaspoons baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 tablespoons sugar
  • 2/3 cup buttermilk (low-fat)
  • 3 1/3 tablespoons vegetable oil

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 450 °F.
  3. In medium bowl, combine flour, baking powder, baking soda, salt, and sugar.
  4. In small bowl, stir together buttermilk and oil. Pour over flour mixture and stir until well mixed.
  5. On lightly floured surface, knead dough gently for 10 to 12 strokes. Roll or pat dough to ¾-inch thickness. Cut with a 2-inch round biscuit or cookie cutter, dipping cookie cutter in flour between cuts. Transfer biscuits to an ungreased baking sheet.
  6. Bake for 12 minutes or until golden brown. Serve warm.

This recipe is great as biscuits. I've served them with soup and also with sausage gravy. They make great pigs in a blanket. (Just wrap one biscuit of dough around a half of a wiener. Bake as usual.)This recipe can also be used for caramel nut pull-aparts. 1/4 cup melted margarine. 1/3 cup brown sugar. 1/4 cup chopped nuts- optional. drop wads of dough onto ingredients in a 9 round pan. Bake as usual. Invert on a plate to serve.
