Sloppy Garden Joes

Full of fresh veggie flavor, these sloppy garden joes will be a fast favorite in your home. Serve on a whole wheat bun with a side salad for a complete meal.
Ingredients
- 1 medium yellow onion, chopped
- 1 medium carrot, chopped or shredded
- 1 medium green pepper, chopped
- 1 pound 85% lean ground turkey (or chicken)
- 1 can (8 ounces) low-sodium tomato sauce
- 1 can (14.5 ounces) whole tomatoes, crushed
- 4 cans (2 ounces each) mushrooms, drained
- 1/4 cup barbecue sauce
- 6 whole wheat buns, split in half to make 12
Directions
- Wash hands with soap and water.
- Sauté onions, carrots, green pepper, and ground turkey or chicken in a large pan over medium heat for 5 minutes.
- Add tomato sauce, crushed tomatoes, mushrooms, barbecue sauce, and bring to boil.
- Reduce heat and simmer for 10 minutes, stirring occasionally.
- Uncover and cook for an additional 3 minutes or until thick.
- Serve open-faced on toasted or plain whole-wheat buns.
- Refrigerate leftovers within 2 hours.
Notes
You can also use 8 ounce of fresh mushrooms instead of canned.
