Applesauce Cookies

Applesauce Cookies
Makes: 12 servings

This simple spice cookie is based on applesauce.

Ingredients

  • 1 cup sugar
  • 1/2 cup (1 stick) margarine (or butter or shortening)
  • 1 egg
  • 2 teaspoons baking soda
  • 2 1/2 cups all-purpose flour
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 1/2 cups applesauce, unsweetened
  • 1 cup raisins
  • nuts (1 cup, optional)

Directions

  1. Wash hands with soap and water.
  2. Preheat oven to 350 °F. Prepare pan or cookie sheet (see below).
  3. Cream together sugar, margarine, and egg.
  4. In a separate bowl, combine baking soda, flour, salt, and cinnamon. Mix well.
  5. Stir flour mixture into shortening mixture just until moist.
  6. Add applesauce, raisins, and nuts (if using).

For Cookies: Drop dough by heaping teaspoon several inches apart on a greased baking sheet. Bake at 350 °F for 10 to 12 minutes.

For Cake: Bake at 350 °F in an 8x8 inch pan for 40 minutes.

Notes

To check cake for doneness, pierce top of cake with a toothpick. Cake is done when toothpick comes out clean.

I received 2 cups of homemade applesauce from a friend and wanted to make cookies that used it up, and found this recipe which used most of it. The only changes I made to the recipe was to add more raisins and 2 handfuls of shredded coconut ... came out delicious! <br/>Before making the recipe, I looked over the reviews and even though someone gave it a one star, I decided to try it anyway ... I can't understand anyone wanting to add more flour ... they must like eating bricks. I go for moist food, myself. :-)

I followed the recipe "as is" to make cakes. They were moist, delicious, and popular with participants. I'll see how the batter does as cookies next.

The recipe was a little too wet, but once they are baked they are mini cake-like "cookies." <br/>Kids absolutely loved them and I would definitely make them again. <br/> <br/>
