Grilled Venison or Wild Game
Venison is a traditional food from Kodiak Island and Southwestern Alaska. Juniper berries or a combination of rosemary, caraway seeds, and bay leaves provide distinctly different flavor profiles. Rosemary, caraway seeds, and bay leaves add a savory, anise, herbal, and slight peppery flavor, while Juniper berries add a piney and slightly bitter flavor.
