Roasted Pork Tenderloin
Pork is a staple of Southern cuisine. Formerly, all parts of the pig were used — from ears to tail — and consumed, especially on farms and by those struggling to feed themselves and their families. These days, cuts such as tenderloins are easier to come by and can fit into many budgets. Pork tenderloin cooks quickly enough to work as a weekday main with a bit of prep but is elegant enough to be the centerpiece of a Southern Sunday dinner.
