Spinach Rice Salad

Makes: 4 Servings

Try this hearty, cold rice salad that could be served with fresh fruit and your favorite protein foods.

Ingredients

  • 1/2 cup Lite Italian Dressing
  • 2 teaspoons reduced-sodium soy sauce
  • 1/2 teaspoon sugar
  • 3 cups cooked brown rice, chilled
  • 2/3 cup fresh spinach, washed and cut into thin strips
  • 2/3 cup sliced celery
  • 1/2 cup green onion, thinly sliced (including tops)
  • bacon bits (optional)

Directions

  1. Wash hands with soap and water.
  2. Combine dressing, soy sauce, and sugar. Stir into chilled rice.
  3. Cover and chill salad.
  4. Add spinach, celery, and onion before serving.
  5. Shake on bacon bits if desired.
