Tuna Apple Salad

Tuna Apple Salad
Makes: 4 servings

Pita bread stuffed with salad greens, tuna, veggies, and fruit makes an easy and flavorful lunch or dinner.

Ingredients

  • 1 can tuna, packed in water (12 ounces)
  • 2 tablespoons red onions (minced)
  • 1 medium apple (cored and chopped)
  • 1 cup celery (chopped)
  • 1 cup golden raisins
  • 5 tablespoons light Italian dressing
  • 2 cups salad greens
  • 2 pita bread, whole wheat (cut in half)

Directions

  1. Wash hands with soap and water.
  2. In a small bowl, stir together tuna, onion, apple, celery, raisins, and 2 tablespoons of dressing.
  3. In another bowl, toss together salad greens with remaining dressing.
  4. Carefully open pita breads and fill with equal amounts of greens and tuna salad.

People either like or dislike tuna. Great way to start a discussion and make suggestions of alternatives, like canned chicken. Everyone who tasted loved this recipe. It was a hot day and this is a light, refreshing salad. I omitted the salad greens and pita and instead served my sample size on a triangle of a whole wheat tortilla. Yum!
