Spinach and Meat Cakes

Spinach and Meat Cakes on a plate
Makes: 6 servings

Enjoy these spinach and meat cakes over brown rice and with a side of roasted sweet potatoes.

Ingredients

  • 1 pound 93% lean ground beef (or lean turkey)
  • 2 cups frozen spinach, chopped (may substitute with 2 bunches of fresh spinach)
  • 1/2 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1/2 teaspoon salt
  • black pepper (to taste)
  • 3 cups cooked brown rice

Directions

  1. Wash hands with soap and water.
  2. Preheat large frying pan (no oil).
  3. Combine all ingredients except brown rice in a large mixing bowl. Mix well.
  4. Form mixture into 12 small balls. Place in frying pan and flatten into patties using a spatula.
  5. Cook over medium heat until cooked on both sides.
  6. Serve over brown rice.

My 4 and 2 year olds ATE this up! <br/>I didn't make them as cakes, just on the skillet and stuffed it into yellow bell peppers (for myself). YUM!

If ingredients are all still frozen, just put it all on the skillet and use the spatula to gradually break the beef/turkey apart. You won't get cakes that way, but it still tastes great!
