Beans are unique foods that can be counted as either a vegetable or protein. Remember to sort and soak dry beans before cooking or use canned beans.

Ingredients

  • 1 pound ground beef, 90% lean
  • 1 large onion (chopped)
  • 1/4 cup brown sugar
  • 1/2 cup ketchup
  • 2 tablespoons vinegar
  • 1/2 teaspoon black pepper
  • 2 cups kidney beans (cooked, or 15 ounce can, low-sodium)
  • 1 can pork and beans (16 ounce)
  • 2 cups great northern beans (cooked, or a 15 ounce can great northern beans, low-sodium)

Directions

  1. Wash hands with soap and water.
  2. Cook ground beef and onions. Drain fat.
  3. Add remaining ingredients and mix.
  4. Place in casserole dish.
  5. Bake in the oven at 350 °F for 1 hour.

We agreed with another commenter, that this recipe is a little too bland. We added fresh garlic, a diced jalapeno pepper and 1/4 tsp. ground turmeric, which perked it up wonderfully!

I made this with dried beans (15 bean) and added garlic, worchester sauce, and a cayenne pepper. It was much more flavorful and I don't think I added much caloriewise. (You have to soak the beans overnight first though.)
