Prepare delicious soup in a snap! Canned beans and frozen veggies make this dish perfect for busy weeknights. 

Ingredients

  • 1 10-ounce packages frozen vegetables, any type
  • 2 cans stewed tomatoes, canned, low-sodium (14.5 ounce)
  • 2 cans broth, any flavor, canned, low-sodium (14 ounce cans)
  • 1 can beans, canned, any type, low-sodium (15.5 ounce)
  • 1 ounce pasta, dry, any type (1 cup)

Directions

This recipe is developed for a child to help an adult in the kitchen. Directions are written to different audiences.

  1. Wash hands with soap and water.
  2. Adult and child: Wash hands well with soap and hot water.
  3. Child: In a large pot, combine frozen vegetables, tomatoes, broth and beans.
  4. Adult: Bring the soup to a boil and add the pasta. Then reduce to low heat. Let simmer for 6 to 8 minutes or until the pasta and vegetables are tender.

This recipe is easy and fast. It is really good. I added 2 teaspoons of Italian season to it. And I used drained and rinsed chili beans. Gave it really good flavor. We cooked ours little without the pasta to get our vegetables cooked.

Great recipe, very easy. My 2.5 year old was able to help with some of the prep (as well as counting and stacking the cans). One change that I made was to add a 15 ounce can of kidney beans (rinsed and drained).
