Full of Beans Hot Dish
Makes: 8 servings

Beans are unique foods that can be counted as either a vegetable or protein. This dish comes together quickly with canned beans but can also be made with dried beans.

Ingredients

  • 1 pound lean ground beef (90%)
  • 1 large onion (chopped)
  • 1/4 cup brown sugar (packed)
  • 1/2 cup ketchup
  • 2 tablespoons vinegar
  • 1/2 teaspoon black pepper
  • 2 cans low-sodium kidney beans (15.5 ounce)
  • 1 can pork and beans (15 ounce)
  • 2 can low-sodium great northern beans (15.5 ounce)

Directions

  1. Wash hands with soap and water.
  2. Preheat over to 350 °F.
  3. Cook ground beef and onions. Drain fat.
  4. Add remaining ingredients and mix.
  5. Place in casserole dish.
  6. Bake in the oven at 350 °F for 30 minutes.

Notes

For convenience this recipe includes canned beans. To lower the sodium, feel free to use dried beans that have been prepared according to the package directions.

We agreed with another commenter, that this recipe is a little too bland. We added fresh garlic, a diced jalapeno pepper and 1/4 tsp. ground turmeric, which perked it up wonderfully!

I made this with dried beans (15 bean) and added garlic, worchester sauce, and a cayenne pepper. It was much more flavorful and I don't think I added much caloriewise. (You have to soak the beans overnight first though.)
