Popping Pomegranate Salsa
This is the perfect dish for winter. It is bright and fresh and has a "pop" that makes every bite exciting. This recipe is great as an appetizer with whole wheat pita chips or as a topping for grilled fish or chicken. This recipe is kid-approved!
Ingredients
- 1 cup pomegranate seeds (approximately 1 pomegranate)
- 2 large pears, diced
- 2 tablespoons shallots, finely diced
- 1/4 cup cilantro, finely chopped
- 1 lime, juiced
- 1 ounce pomegranate juice (about 2 tablespoons)
- 1/4 teaspoon salt
- 1/8 teaspoon garlic powder
- 1/8 teaspoon black pepper
Directions
- Wash hands with soap and water.
- Add all of the ingredients into a bowl and mix until well incorporated. Serve over chicken or fish or as a snack with whole wheat pita chips.
