This is the perfect dish for winter. It is bright and fresh and has a "pop" that makes every bite exciting. This recipe is great as an appetizer with whole wheat pita chips or as a topping for grilled fish or chicken. This recipe is kid-approved!

Ingredients

  • 1 cup pomegranate seeds (approximately 1 pomegranate)
  • 2 large pears, diced
  • 2 tablespoons shallots, finely diced
  • 1/4 cup cilantro, finely chopped
  • 1 lime, juiced
  • 1 ounce pomegranate juice (about 2 tablespoons)
  • 1/4 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon black pepper

Directions

  1. Wash hands with soap and water.
  2. Add all of the ingredients into a bowl and mix until well incorporated. Serve over chicken or fish or as a snack with whole wheat pita chips.
