Combine your favorite beans with herbs and spices to make a delicious patty for dinner tonight!

Ingredients

  • 2 cups low-sodium canned beans, canned (or cooked from dry)
  • 1 egg (beaten)
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 2 teaspoons Italian seasoning
  • 1 cup bread crumbs (dry, or cracker crumbs)
  • 1/8 cup cornmeal (or all purpose flour)
  • 2 tablespoons vegetable oil (or cooking oil of your choice)

Directions

  1. Wash hands with soap and water.
  2. In a large bowl, mash beans. Add egg and spices and stir to mix evenly.
  3. Stir in bread crumbs. If mixture seems too wet add more breadcrumbs, 1 tablespoon at a time until mixture resembles meatloaf.
  4. Shape into little sausages or patties. Roll in cornmeal or flour.
  5. Fry slowly in vegetable oil over medium heat until crusty and golden brown.

Notes

  • Serve in place of hamburgers and add toppings.
  • Serve in place of breakfast sausage.

You may want to add 1/4 cup of water or bean liquid to the mixture for more moisture. The crunchy crust is awesome. Fry three minutes on each side (don't flip them early). These were also good reheated in the microwave, very soft and meat-like. I added some pasta sauce and a little shredded cheese on top. I tested these at home as a possible SNAP-Ed recipe.

I'm a SNAP consumer. This recipe is staple fare in my house. I just use more oil frying the patties. I also add scallions/green onions, & thawed frozen chopped spinach. Delectable!!!

Patties were very dry. I even added an extra egg. Used dried beans I had soaked and cooked. Canned beans might be better? Also used black beans, might suggest great nothern.
