Salsa Pinto Beans

Salsa Pinto Beans in a bowl
Makes: 7 servings

Spicy, savory beans make a great fiber-filled side dish.

Ingredients

  • 1 tablespoon olive oil (or cooking oil of choice)
  • 1 medium onion, chopped
  • 1 clove garlic, minced (or 1/8 teaspoon garlic powder)
  • 2 cans (15 ounces each) low-sodium pinto beans, drained and rinsed
  • 1 cup salsa

Directions

  1. Wash hands with soap and water.
  2. Heat the oil in a skillet over medium heat.
  3. Add the onion and garlic and cook until tender.
  4. Stir in the beans and salsa.
  5. Cook for 10 minutes.
  6. Serve over rice, pasta, or baked potato.
