Sweet Potato Custard
This custard is sweet and creamy and is a wonderful dessert or a sweet treat as a snack.
Ingredients
- 1 cup cooked sweet potato, mashed
- 1/2 cup banana, mashed
- 1 cup fat-free evaporated milk
- 1/8 cup brown sugar (2 tablespoons, packed)
- 2 egg yolks, beaten (or 1/3 cup egg substitute)
- 1/2 teaspoon salt
- 1 nonstick cooking spray (as needed)
- 1/4 cup raisins
- 1 tablespoon sugar
- 1 teaspoon ground cinnamon
Directions
- Wash hands with soap and water.
- Preheat oven to 325 degrees F.
- In a medium bowl, stir together sweet potato and banana.
- Add milk, blending well.
- Add brown sugar, egg yolks, and salt, mixing thoroughly.
- Spray casserole dish with nonstick cooking spray. Transfer sweet potato mixture to casserole dish.
- Bake in preheated oven for 35 minutes. Remove from oven.
- Combine raisins, sugar, and cinnamon, sprinkle over top of sweet potato mixture.
- Return to oven and bake 10 more minutes.
